Cranberry Pear BFF Steel Cut Oatmeal Recipe [Vegan, Gluten-Free]


Most of us are no stranger to the pear-cranberry connection. Every autumn, we begin to find it in pies, granola, stuffing, even cocktails. It's the t-shirt and jeans of cool season foods: pretty darned awesome but so classic it can easily be taken for granted.

Let's rememeber that this a combination to truly be grateful for. Pears have a tremendous amount of fiber and aren't too shabby with the vitamin C either. Cranberries have high concentrations of vitamin C, dietary fiber, manganese and vitamin K.

Let's celebrate the combination of sweet and tart with this warming cranberry pear steel cut oatmeal that will make you fall in love with the pairing all over again.

Cranberry Pear BFF Steel Cut Oatmeal

Ingredients

  • 2 c water
  • 12 c steel cut oats (lotsa fiber & protein, gluten-free optional)
  • 1 ripe pear (Bosc pears cook the best)
  • 13 c unsweetened dried cranberries
  • walnuts (superhealthy; omega-3 up the wahzoo!)
  • ground flax seeds fiber (omega-3)
  • cinnamon (sweet tooth tamer)

Directions

  1. Boil water. (Cover the pot so it will happen faster.)
  2. Stir in oats and keep stirring for about 1-2 minutes.
  3. Turn down heat to simmer, uncovered.
  4. Core and chop pear into bite sized pieces. It doesn't matter if they aren't uniform.
  5. Stir pear and cranberries into simmering oats.
  6. Stir every 5 minutes or so for the first 15 minutes. As the water is absorbed by the oats you'll need to stir more often to prevent lumps and sticking. Stirring every 3 minutes or so during the last 15 minutes of cooking is ideal.*
  7. Once most of the water is absorbed and it's the consistency you like, you're done.
  8. Let it rest, covered, for about 3 minutes. (Trust me: it just tastes better this way.)
  9. Spoon into two bowls. Stir a teaspoon of ground flax seeds into each bowl. Top with a some roughly chopped walnuts and three supershakes of cinnamon.
  10. If the pear is ripe and you use enough cinnamon, you probably won't crave sweetener. However, if you must have it, a fairy dusting of brown sugar is a nice flavor to add. Please promise me you'll try it without sugar first though.
  11. Share with your best friend forever. If you're not sharing, save half for later in the week. Reheat with a splash of unsweetened vanilla coconut milk or almond milk over low heat.
